one medium avocado, cubbed
about 1/4 cup shredded carrots
lemon juice
olive oil
salt
pepper
fresh chopped cilantro
a few thick slices of queso fresco, optional (fresh cheese... we don't really have an equivalent to it in the U.S., but feta would be an astounding addition)
Mix veggies together. Add lemon juice, olive oil, salt, pepper and cilantro to taste. Top with queso, if desired. Serves one as a nice lunch or two to three as a side dish.

"Produce passion!" Is that an order? I hope so!
A reading possibility for you if you start to get into a political mood... Chile's former UN Ambassador has written a kiss and tell book about dealing with the Bushies in the lead up to the Gulf War: "A Solitary War: A Diplomat’s Chronicle of the Iraq War and Its Lessons"
It's an order!
I'm not in the political mood at all, but thanks. I'll make note of it in case the mood pops up. :)
Yum! Allie, you're a vegetarian diva,not a nerd!
